WINTER SPACIAL DRYFRUITE LADDU

Ingredients:

1 cup mixed nuts (almonds, cashews, pistachios, etc.)

1 cup pitted dates

1/2 cup desiccated coconut

1/2 teaspoon cardamom powder

2-3 tablespoons ghee (clarified butter)

2-3 tablespoons honey or maple syrup (optional, for added sweetness)

Instructions:

1.In a pan, dry roast the mixed nuts over medium heat until they become fragrant and lightly browned.       Be sure to stir constantly to prevent burning. Once roasted, allow them to cool slightly.

2.Transfer the roasted nuts to a food processor and pulse them until they are finely chopped. Be careful     not to over-process them; you want the texture to be coarse, not a fine powder.

3. Add the pitted dates to the food processor and pulse until they are finely chopped and well combined       with the nuts.

4. Sprinkle the cardamom powder into the mixture and pulse a few more times to distribute the flavor          evenly.

5. Heat the ghee in a small pan over low heat until it melts, then pour it over the nut and date mixture.         Mix well to ensure that the ghee is evenly distributed.

6.Take a small amount of the mixture in your hands and roll it into a smooth ball, about the size of a           golf  ball. If the mixture doesn't stick together, you can add a little more ghee or honey to help bind it.

7. If desired, roll the laddus in desiccated coconut to coat them evenly.

8. Place the laddus on a plate or tray and let them set at room temperature for at least 30 minutes.

Your dry fruit laddus are all set and ready to be devoured. You can store them in an airtight container at room temperature for up to a week, or in the refrigerator for an even longer shelf life.
